Springfield Méthode Ancienne Cabernet Sauvignon 2004

It’s curious how some wines attract cult status while others go largely unsung and the Méthode Ancienne Cabernet Sauvignon from Springfield in Robertson is perhaps one of those that deserve more recognition than it gets.

From a vineyard planted in 1979, it undergoes spontaneous fermentation before spending 24 months in 100% new oak and is bottled unfined and unfiltered.

Last night, the 2004 which was looking remarkably youthful and composed. Red and black fruit, relatively medium bodied, fresh acidity and fine, rather spicy tannins. Super stuff.

  1. I really like Springfield’s wines. I drank one of these (Methode Ancienne 2003) a year ago and I remember thinking that it may be a little over its prime. It had a little brown tinge on the rim and the impression was that it aged a little too soon. However very wiling to revisit my impression!
